If you enjoy seeings things that come in so many different flavors, colors, shapes, and sizes and the different smells of cinnamon, almond extract, and vanilla extract and you always wonder what you will bake on a weekend while at your day job, then these and more are all signs that baking is your passion.
Baking, over any other culinary venture, involves a special kind of person. It is not enough to go after a recipe exactly, nor will it do to have an exquisite looking treat that tastes below an average level.
Bakers need to be adorable, their delicacies filled with the passion they have for creating a smile on someone’s face. That passion to form a moment of delight with a sweet treat is what you can find in Aegeana’s Bakehouse.
Lovely Doris of Aegeana’s Bakehouse gave us a time to share her passion with WhichCraftPh.

2. How did you become interested in professional baking?
I’ve got my interest in baking since childhood. I remember we had a neighbor that bakes and it really smells good ,that day I said to myself that one day I will bake and sell cakes too. This baking job came to reality and started when I had my child and became a full-time mom. During the first birthday of my daughter, I am looking for a baker that can customize a cake, I didn’t know any so I searched online then I saw one from Paranaque. When I picked up the cake I was amazed and I said to myself that I can do that too. When we transfer to our house here in Bacoor, Cavite I started baking and learning how to do fondant thru YouTube. Then, on the 2nd birthday of my daughter, I made her a cake and from then on I started to take orders.
3. Did you go to culinary/pastry school? Or can you share a brief introduction on how did you learn this craft(baking)?
No, I didn’t go to culinary/pastry school but my course is Hotel Restaurant Management in University of Perpetual Help of Rizal Dalta in Las Pinas. We had a major subject of baking and from then I knew I will be a baker someday!
4. In your opinion, what is the hardest thing about being a baker?
The hardest thing is selling your baked goods. How to convince people that your goods are delicious and worth the pay. At this time, customized cakes competition is very high. You need to be creative and you must lower your price to reach most of the possible customers’ budget.
5. What is the best thing about being a baker?
For me, the best thing is that I am doing my passion and at the same time I am earning too. I am a very artsy craftsy person and through baking, I can express myself. I also find happiness whenever the customer comes back and have a positive comment.
6. What do you think are the most important skills to have as a
The most important skills are that you need to know how to bake and the skills of knowing the taste of your baked goods. You need to be creative too and upgrade your knowledge by attending classes.
7. Any advise to aspiring baker?
Before selling your baked goods, you must have a taste test and lots of practice. Practice your skills. Criticized your work first before letting others judge it. For me, I can’t sell my customized cake if I know it doesn’t look good. If I am so disappointed with my work I do not market it. I always plan ahead of time so that I won’t be short on time of delivery and won’t be cramming because I don’t want my projects to end up so ugly and messy.
8. Aside from baking, can you share other things that you love to do?
I am an artsy crafts person, anything about art I want to do it. I paint acrylic on canvas, I did a few, I love to decorate and I am also considering to do DIY furniture If I can just do it. Recently I did a play kitchen out of boxes for my 7-year-old daughter. She wants a play kitchen, so instead of buying, I DIY and I am happy with the outcome. She really loves it. I also did a Dessert table for my friend’s event. It’s my first time to do it.
Can you share us any recipe?
MOIST CHOCOLATE CAKE
1 CUP OF APF
1/4 CUP OF COCOA
1 CUP SUGAR
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/4 cup veg. oil
1/2 cup milk
1/2 cup hot water
1 tsp vanilla
1. Preheat the oven to 350° C
2. Combine all the dry ingredients and then the liquid ingredients except for the hot water.
3. Whisk for 5 minutes, combine last the hot water. This recipe is exactly for 1 6×3 round pan.
4. Bake until the toothpick comes out clean when test.
